I was fortunately enough to get Benediction during Vanilla. Is there any current way of transmogging a staff weapon with shadow spec? I'm stuck using a one hander and off hand and I just don't have any good transmogs for those slots.

Not while you're wielding Xal'atath, no.

It's a big dagger, looks like a sword, and sheathes on the back. It's green but the green color don't show up while you're in shadow form, it looks kinda like black glass.

This is the only reliable option, but you kind of have to build the transmog around it.

Chest: Stormspire Vest
Tabard: Argussian Reach Tabard
Hands: Heroes' Handwraps of Faith
Legs: Legwraps of the Master Conjurer
Feet: Veteran's Mooncloth Slippers
Waist: Clutch of Andros - It was from old Scholomance, so it's no longer available. I'll see if I can find a good replacement.
Dagger: Blade of Eternal Darkness - Not so sure about that slot. I like that dagger, but the black enchantment effect is so weak nowadays. I think I'll switch to the Challenge artifact appearance after I unlock the RBG variant. The set goes really well with the purple Embrace of the Void skin for the Holy artifact.
Off-hand: Prophetic Cane - It was from the Horde version of the old Scarlet Monastery quest, and is no longer available. I like it because it's one of the few off-hand items that are visible while sheathed, but it's easily replaceable.

I've played around a lot with this more "casual" Shadow Priest look, so I have a few alternatives. I have found that the wrists, hands and feet pieces from the Raid Finder version of the latest Warlock tier set (Blood-Drenched Bindings, Handwraps of Inevitable Doom and Lady Dacidion's Silk Slippers) look very nice as well, in particular for Blood/Void Elf ladies, since it works better with their skinnier frames. In that case, I'd switch the chest for the Black Mageweave Vest.

Antorus tier set looks very nice. MB you should change the head item only.
