Belize was formerly a British colony (it was was known as British Honduras) so a huge portion of the population (and when I say huge, the whole country has a permanent population of like 350k people, the largest city being Belize City at like 52k) speaks English. When my family was looking at a vacation in Central America, I suggested Belize specifically because they spoke English, because I don't speak Spanish. You get the flavor of the culture down there, you get both the cool aspects of being close to Mayan ruins and the jungle as well as the beaches and water.
If you do ever consider going down as a "test run", I would suggest staying in San Pedro on Ambergris Caye and also at the Sleeping Giant resort in the middle of the country, out in the jungle area, near San Ignacio. If you like the outdoors (like going hiking or whatever), it has basically everything.
When we were younger, as in 1990, Bali, nead Ubud. We even built a house there. Now we don't know.
