MOBO Recommendations

Building a new system and am completely lost on what MOBO to get.

I'm gonna be running a i5 2500K with either a gtx580 or a HD6970. Possible running SLI/CF in the future.

Looking at around the $300 mark and would appreciate any suggestions.

Something like this should do you well ASRock Z68 EXTREME4 GEN3 and save you a little bit of money

If you want many extra features, able to run 2.0 x16 dual GPU and ready to pay more then take a look at the ASRock Z68 Extreme7 Gen3

5 x PCI Express x16 slots (single at PCIE 3.0* x16 (PCIE2) mode, dual at PCIE 2.0 x16 (PCIE1) / PCIE 2.0 x16 (PCIE4) mode, or tripple at PCIE 2.0 x16 (PCIE1) / PCIE 2.0 x8 (PCIE4) / PCIE 2.0 x8 (PCIE6) mode; PCIE5: PCIE 2.0 x4 mode)

(PCIE 3.0 is only supported with Intel Ivy Bridge CPU. With Intel Sandy Bridge CPU, it only supports PCIE 2.0.)

keep in mind you will pay more for Z68 chipset which you may not even fully utilize...in this case you can save few bucks and grab P68 chipset which may be perfect for you.
