If your product isn't immediately selling, you need to drive them out of the market. Leaving an item up for an hour or more is asking for an undercut. What I do when my most annoying competition is on (the bots and campers) is temporarily list slow sellers at one item per, vendor cost + listing fee (4g and some change for cut gems). This will flag their addon and prevent them from undercutting you, and if the product sells then at least you've made vendor price. Once you've driven them out of the slow selling markets this way and they get frustrated, or their bot logs, you can pull them and relist for proper prices. I drove 2 competitiors completely out of the Ember Topaz market this way successfully and have now increased profits daily by 30%.
Bottom line is, undercutting is not just part of the game...it IS the game. You need to be able to respond fast and quick to sell in today's asphyxiating economies. If you can't then get out of the market because it's only going to get worse leading up to MoP.
