Just wondering what would be the best way to go. Don't care about arenas anymore and RBGs are zzz... I just want to hunt people down in the world and gank them all day long.

Rogue has always been and will be the best 1v1 class ever.
Really? Because I've been able to beat rogues 1v1 with my hunter and ret pally for quite some time now.
On Topic: If you're looking to gank people, why would you go with a healer? The damage holy paladins had at the 5.0.4 release is no where near where they will be at come level 90.

Right now any hybrid should beat any bm hunter. I watched a sub-1500 ret pally beat the best hunter on my server in a duel.
But a bm hunter should destroy a mage.
It is, and will continue to be Rogue.
And yes, hunters have an easy time against them due to class mechancs such as flare, pet and traps, but 1 matchup does not counter balance 10others. They way the rogue class works allows it to lock down any single target and nullify its dmg, which is fine in arena with other players back up, but alone it stands strong. At the very least, a rogue can force a stalemate 9/10 with vanish spamm.
Even after recent nerfs to them, the class is designed around PVP play, while so many others have it glued on (Or so it seems). Even if it doesnt win everything, it will remain a content in the top 3 until a major rework.
Close behind (you guessed it) Frost mages. Blizzards fanboy-ism with mages never ceases to amaze me tbh, when was Mage not among the top for PVP or PVE on a competative level.?
Just because you can beat some rogues, does not make your point valid.
World PvP wise, a rogue can always choose his fights, and run away successfully if he is going to lose.
They usually get to do the first hit and can catch you off-guard.
Plus, a rogue who blows all his cooldowns offensively, is almost unstoppable.

My statement wasn't "some," I've been playing my hunter since Vanilla and have a very high win ratio against rogues. And just as a poster above you stated: it's largely due to the tool set that hunters have that makes them play so well against rogues. Things like flare, traps, pets etc. help out a great deal. All of these tools also work really well for world PvP for hunters especially when you add in the ability to track your targets, having a slow, knockback, stun and / or silence + scatter shot and all of these abilities can be used twice now that Readiness is baseline. Camoflauge is now also an effective stealth or vanish when used with Feign Death, making hunters great for world PvP. It's one thing to stealth up on someone and smack em in melee, it's entirely different to stealth and open up at a range.
Not sure if you played much beta, but Ret was doing fairly well in PvP even without the use of self-healing. A well played ret pally can still do very well in pvp.

If you seriously can't beat a rogue right now at 1v1, you have L2play issues. At 90, I don't I don't expect anything to be different, judging by the beta.

my vote is BM Hunter. i play ret, so maybe i'd stand a better chance as a different class.
Frost mages are generally very strong in 1v1, and they are doing very well in a duel against basically everything except a bm hunter. Rogues might be a bit tricky, but as rogues aren't in a very good state right now they should be easy for mages.
