The guy in the first gif kinda joked about it being a good luck thing. Only the fighters from the Greg Jackson MMA camp do it though. It was kinda their thing.

And the dude has a lot of blood lol. It doesn't bother me but it's pretty impressive that these matches end up like this, some atleast. Atleast it's not fake like those wrestlers I watched as a kid.
