Earning gold with professions!

Hello guys! I have played WoW on and off since TBC and I've never been good at making money. I've always done dailys to cover Flask/Pot/Food-costs. But now I want to get me a quite good income from the professions i currently have.

At the moment I have 15.000 gold and almost no mats what so ever for the professions that I have.

This is what I got at 600:
Blacksmithing + Enchanting
Tailoring + Engineering (my main)
Mining + Herbalism
Alchemy (Elixirmaster) + Jewelcrafting
Alchemy (Potionmaster)

I rarely do anything to get Spirit of Harmony on any character other than my main. I know that I could endlessly farm herbs and ores to earn money through Alchemy, Jewelcrafting and Blacksmithing. But it's quite boring to farm that much, at least on a high populated server.

I want to know which markets is the ones that bounces between high and low prices very fast. Not just so I can buy cheap and sell expensive. But so I can use my professions and watch certain markets to craft certain things and make bigger profits.

Any other tips and tricks with my professions would be nice.

Note that you don't have to tell us which server you are playing on so that we're stealing your market.
