Undead can only be raised from dead human?

There is a Plague designed to kill and automatically raise Humans from the dead. That is the Plague that the Scourge wielded and that the Forsaken now wield.

But any race can be raised from the dead manually (that is: through necromancy).

So, if the Forsaken killed twenty humans in combat, they could bring in necromancers to raise them from the dead. Or they could just attack with their plague, the Humans would die and would raise from the dead shortly. If it was, say, a contingent of Night Elves, though... They would not be susceptible to the raising effects of the Plague and would have to be raised manually (by necromancers).

Doubtful. There's no reason a raised person of any race would just automaticly go "Horde is best faction kk?". Honestly the whole being able to raise people from the dead is faulty, unless they only turn into mindless wretches, like the original plauge did.

Zul'Drak is full undead trolls. Also, one of the trolls in the questchain there turns you in an undead. So that proves that any race can be raised.

Fun fact: The Forsaken are mostly from the High Elven race. Only a small portion of Undead are actually human.

Not really, the Forsaken are not using the same plague, the forsaken plague make everyone become goo and explode , but yeah, the forsaken can rezz any race with the Valkyrs, the only race they can't rezz are the Worgens cause the curse is way to strong for the Valkyrs, they are DKs cause the LK was strong enought to raise them

Death Knights are not necessarily undead. Arthas became a Death Knight without dying.
