I would probably be NPC in Peak of Serenity, sitting at entrance watching young monks running around, while drinking beer

Seeing as I primarily play on a Nelf Monk...
for the Monk, I'd be a traveling monk, who'd travel across pandaria, you'd have to find him, and he'd teach you Upgraded versions of your current spells and attacks, with new names and everything. Such as Rising Sun Kick would be replaced with Fierce Kick of Flame, and something like, oh, I don't know, Shadow bolt, could be Deathbolt. Attack moves would increase in power by double their normal power, healing moves would heal for more, and anything else will not be affected. He can also grant you a buff that will allow you to 1-hit the next NPC that isn't an elite or over level 90 for 1 hour, and will go away once you attack an enemy.
Isn't it fitting WoW really took a nosedive after 'the Cataclysm'?
My troll rogue would be running a neutral casino and Tigon-ing out on any trouble makers.
My human pally would be a quest giver working for the argent crusade or what ever incarnation they happen to be next.
Random NPC walking the roads dressed as a postman, so at least players can see at least one npc that delivers the mail :P
Or if i wanted to be an annoying npc , it would be a quest giver that is surrounded by mobs and almost always fights with them, making players have to kill the mobs just to get me to talk about the quest.

Blood Elf Hunter: One of the Farstriders outside of Silvermoon and would sell training equipment to rogues and hunters. Could also be a trainer.
Worgen Warrior: Seen in the Cathedral of Light, seen reading from its libraries, or one of the guards walking around Stormwind.
Pandaren Monk/Rogue (RPed as the same character, rogue turned monk): In a house in the Jade Forest, probably the abandoned one up top of Dawn's Blossom going on about her family's secret brew.
Night Elf Druid: An NPC that randomly toured desolated areas and gives a quest to help clean/nourish the lands. You would take her around a la the quest in Kun'Lai where the Jinyu cleanses the lake of sha corruption.
Gnome Death Knight: Walks around Stormwind's streets selling baked goods, candy, and sweets. Would make random remarks about what happened to the last person that threatened to punt her.
Human Paladin: Constantly fighting the undead, possibly a quest NPC in the plaguelands.
"Human" Mage: Would be a Darkmoon Carnie, putting on the act of her returning from undeath as part of a freakshow, when she's truly just an undead using a human guise. Happens in one of the blocked off tents.
That's all I can really think of at the moment.

A quest giver who is constantly getting agrod by patting mobs preventing you from picking up or turning in my quests.

Probably a mainstay character which you meet as a small side character first during a questline. Susaku continues to help the player, showing more and more his prowess untill the epitome where you and him fight off a baddy encroaching upon the quest giving area, in which you realise Susaku is actually a Death Knight sporting Argent Crusade colours. Afterwards, he smiles, commends you for your skills and wishes you luck, before you never hear from him again.
Then he'd probably pop up as a character in those quests that give you random helping characters, like the one in the Hyjal Dailies.

Warlock: an rare npc that hits incredibly hard and will go invulnerable at 1% and congratulate you and gives you a hug.
Warlock: Warlock trainer who also has a shady business in selling poisons.
I can imagine mine would be sitting on Sunstrider Isle, idly wandering the gardens, until you reach level 90, at which time if you were to come to Sunstrider Isle (and be a mage, priest or warlock) he would appear hostile and one shot you to 1hp with Holy Fire and a dialogue cinematic would then occur.
"Never before in all of these years have I met such an irresponsible student such as yourself. As a student at the Sunstrider Academy and a student of Magic here in Quel'thalas you are expected to act with a certain degree of respect. You think that you can just, waltz out of here to Silvermoon and run around Azeroth rampant learning our sacred magic from Trolls and Tauren do you? You are Sin'dorei and will begin to behave like one now. To come here as you are, oh exalted one you must first earn your place amongst us, and earn the respect which you appear to believe is due."
You would then be ported to a locked room underneath Sunstrider Spire where a very nonplussed Elthorian and Magistrix Erona chastise you some more. To get out, you would have to undergo several gruelling solo scenarios of Sin'dorei magical history and practice, then you can leave. At this point a new faction grind would appear; "Sunstrider Magisters". There would a gruelling quest chain of dailies, involving lots of Quel'danas things etc blah blah blah. Basically at exalted you learn a new spell: "Teleport: Sunstrider Magister Enclave" which is a very pretty place with lots of quirky magical items that you can earn with tokens that do fun things.
That is what I would be.
