Having more titles is always better in my opinion. But in all honesty, I don't care that much about these titles specifically.

No. In regards to profession titles, they should have ones that require time and dedication to achieve. If you given 'Engineer' for achieving, say, max-level (675) skill, then everyone would have it. Look at the current ones:
.None for First Aid-too easy?
.Fishing-Salty is from getting 14 achievements
.Archaeology-3 titles from 1/10/20 rare artifacts, restoring 20 pristine artifacts
.Cooking-Master of all 6 Ways, Chef for 11 achievements
What else should be added? One that involves alts having max level skills is stupid as it ruins trade chat and stops people from making money from their own professions.
Here's a good idea: Create X amount of all bandages that can be created, for some sort of title like <Medic>.

A title for doing a profession based questline would be cool.

Yeah their would need to be some sort of challenge to it, can't just give it out for free. It would be cool though, I feel like this could complement the game well, you would know which people standing around in main cities have which profs so you can bug them easier to make you stuff
No, because titles just aren't special if a million players have that title. Its why the Jenkins title is so lame.
I suppose someone would like it for RP purposes, but I don't RP and I see titles as vanity items that show an accomplishment and bring bragging rights.

Some professions have titles, and some don't. I would like to see this rectified, myself. Either from meta achievements or big crafting quest chains. And not just "Engineer" or "Blacksmith." The existing titles don't follow a format like that. Possibly something more creative, like "Mechano Lord" or "Forgemaster." Just ideas.

Yes if you gave each profession a Meta achievement like fishing has , and make one as hard as to get as winning the stranglethorn fishing contest and not just a title for reaching max level .
I'd love profession titles. I think the best situation would be earning them when you have maxed a profession but then you lose them if you unlearn that profession or no longer have it maxed like when a new expansion hits. Then you've got to work your way up to max to earn it again giving even more motivation to hit max.
I've been wanting a 'Doctor' title based on First Aid for a long time now (and ironically I've never even come close to maxing First Aid on any character).
Eh, I'm more of the opinion that titles should be something difficult to achieve and not necessarily part of everyday WoW life. Professions are something everyone does, why give a title for it aswell?
I don't see myself using them but if it makes some folks happy, why not?

"[Name], Bane of Beasts" would be 1000x cooler.

As long as you don't earn them for just maxing out a profession.
