Human, as for all race/class combos, if a human can be it, it's the best. Racial pvp trinket > everything else any race can bring.

So stone form from dwarves or shadow meld from night elves don't compare to the double dps trinkets?

Have you considered testing Draenei Racial with Fortifying Brew? Even if the racial doesn't get max health boost, since they have Same CD time and combined with 20% damage reduction can help you in a pinch. I run a draenei monk for that reason, but it was just an idea.
