Female blood elf or female human. Monk/leather gear looks good on both, so do animations.

Pandaren of course! They just fit.
I would say female Night Elves. Their monk animations are amazing but something about them just reminds me more of 'savages' which isn't very monk like.

If not Pandaren, then probably Nelf or Human.

the problem with monks is that alot of the previous leather sets are either class restricted, or look bland, because they would either be hidden by tranformations (druid) or are bland on purpose due to class flavor (rogue). There are only few unique and really impressing pre-MoP leather sets out there >_> (at least compared to other armor classes IMO)

Male Dwarf with savage hair style (hide helm), male Human wihotu hair and without beard. Pandaren would be my first choice if they would be smaller, like dwarfish size.

right now? none apart from pandaren, the animations suck on those models with the blocky hands and such.

After the model revamp? I'd like to try Belf, troll and Draenei models. see how they look.

I think N/B Elves look best for a class of pure skill, speed, and agility. They look like they can do the things monks do.
