Wouldn't it be a pain to level JC or Blacksmithing to 600 without mining? For that reason, I'd be inclined to stay with what you have. Alchemy is never a bad choice if you raid (and so need flasks etc) and usually has a valuable daily transmute CD.
More generally, I'd be reluctant to make a big time investment to switch profs now when they are going to be less important in WoD (no combat perks) and the details don't seem quite clear yet.
If you have a miner alt, so switching profs is not a big obstacle, I'd be inclined to go BS than JC. JC is very convenient for self-sufficiency on live, as there are so many gem slots but as you say, most of them are apparently going in WoD. BS being able to craft warrior gear sounds like it will become more even valuable in WoD than it currently is.
