Cranberry Sauce... I know I could eat it year round but it's such a Thanksgiving staple.

Never had a taste for cranberry Sauce. It is the worst.

I stared at this for so long...

I don't have a recipe, sorry, but here it goes. Green beans.

Day before: parboil the green beans.

    Pan.
    Crisp up some prosciutto, remove.
    Toast some walnuts, remove.
Saute some chopped shallots (onions are fine) and garlic. Don't remove.
    Add the green beans.
Enough chicken stock to get some on the pan bottom. It'll be done about when that's gone.
1:3 ratio red wine vinegar:to oil
    Salt. Always salt.
Prosciutto and walnuts back in, then crumble some Feta or similar cheese add the vinaigrette. Done.

10 minutes if the green beans are parboiled.

Try adding a jalapeno or two.

Does gravy count? Too many people fuck up gravy and make it too thin.

Or make it from a packet or tin...fuck that noise. Simmer the neck and gizzards, toss in some onions and other flavoring veg if you want, add roast drippings, strain, bit of flour, salt, pepper. Fucking gravy.

The bacon is on the turkey! Basting is for fools. Strap a pack of thick fatty bacon on top of it, it bastes and crisps up the skin nicely. Then the run off is collected in the roast drippings.
