Hardest classes to play? I'm not talking about the Easy to learn, hard to master classes. I'm talking about the hard to learn, harder to master classes.
I would assume warlocks would be up there?

rogues? lol no no no. Sub Rogues were simplified 6.0 along with most other high skill cap specs.

For a good player, any class is going to be easy to learn. For a new player, pretty much any class is going to be hard to play properly. I haven't played my alts yet this expansion so I can't comment on them, but I was surprised to learn that a spec considered easy is actually harder than previously thought. Arms warrior IMO is harder to play than fury. It's a much different playstyle than most specs. The whole spec revolves around waiting and lining up cooldowns and rage management. It's actually a lot of fun once you get into it. Glad spec is probably the most spammy spec in the game if that's what floats your boat or what you consider to be hard.

Surprised no one has mentioned WW Monks. In terms of normal rotation they aren't so bad, a lot of people complain about ChiEX management (which I personally have no issue with) but when you throw in the effective use of SeF, managing FoF to full effectiveness in terms of TeB/Proc timing while still maintaining the proper rotation and when to use abilities like FoF while using SeF on targets that are moving (since clones do not move while channeling) you watch how many peoples DPS drops like a rock because they can't manage all the buggy/bad design that comes with the class.
I'm not sure how many classes are in the zero downtime zone with WW Monks, but if you suck at micro management and don't want to develop RSI then I'm sure there are far easier classes.
Of the classes I've played (Rogue, Druid, Hunter, Monk) I find Windwalker the hardest.

Sub isn't as difficult as it was in the past, unless it just clicked for me post-6.0. The hardest part about going from Combat/Assassination to Subtlety was the completely different list of spells you have to use and buffs/debuffs to track. Once you get some Weakauras to help track all these things you'd never heard of as Combat/Assassination, you can get the hang of it pretty quick.

i play several classes, and more intensively feral (main), rogue (combat/Sub), monk and hunt (surv). All are 680-685,and i played them on brf hc clean/mythic highmaul at least
I found hunt (sv) the easiest, need to learn how to manage your focus to always have enough for importants abilities, without capping it (especially with focussing shot)
Rogue after, combat easiest than sub for basic mecanism, even if perhaps equal in difficulty if u want to correctly manage your cds and bandit guise. For sub (perhaps i found it enough easy because i played feral since BC and it's enough close, and keeping s&d/bleed up is an automatism ), u have to optimize find weakness
Feral after, lot of things to keep up and several snapshots still existing (even if easier than before, no more mangle debuff, no more trinkets snapshotting, no more thrash on ST), and the only one of these 4 classes which have to work a lot more than others for cleave/aoe.
Monk ww the hardest of the 4, i have to admit i'm still far to master it when i saw the numbers our main monk is able to push even in ST, basics are pretty simple, but mastering it ... lot of things to manage, a timing to learn, a good use of every single ring/trinket proc especially with teb and fof, a good use of sef (and not just put your images and let them alone) ...

Demo lock ? wtf are you guys serious? i learned how not to suck in 10 minutes and im serious.
Not sucking isn't hard, OP said skill cap, not skill floor.
That said, all three warlock specs feel easier compared to previous expansions due to a mix of snapshot removal and the lvl 100 talents almost universally simplifying gameplay, from SB:Haunt starving you of shards so much your usual haunt during proc gameplay is usurped by the need to keep SB:Haunt up, Demonbolt removing all of the foresight needed to minmax fury usage and serv's pet just being a raw damage increase with no input.
Few expansions ago I'd have called the class one of the harder ones to play, after WOD's changes and additions, I'm not so sure, but I've not spent much time playing other classes at any notable level to know if they've been simplified too.
