So i just started Spice and Wolf

and saw theres only 2 seasons, but a shit load of lightnovels. Do the lightnovels go beyond where the anime ends, or is where the anime ends is where they are gonna end the LNs?

LNs go beyond. The anime is well overdue for a third season that it'll probably never get.
