I have this family recipe for oatmeal and shortbread like cookies with a date filling that are crack like in nomness.

Varies. Sometimes chewey, sometimes crunchy. I'll also take chocolate chunky ones or M&M's, or chocolate chip cookies with a filling.

I usually have at least one pack of chip's ahoy, chewie ones at home.
I don't like dry or crunchy cookies.
Some filling is cool too tho.

I actually wish I could find a chocolate chip cookie, without chocolate chips. (so like a sugar cookie almost but with brown sugar). Never been able to find one though.

Just make it yourself. I've been known to do that. I'm not a fan of semisweet chocolate chips for the most part, and if you're just eating the dough and not the baked cookies, the chips just get in the way.

I don't know why, but that sounds a lot more disgusting than eating unbaked chocolate chip cookie dough.
