I just call it playing it safe not cheesing (although the demon did glitch when i did it and fell through the wall to its death)

The giant rat beast thing is awful.
As for the giant crabs they become fairly easy if you just shield up/dodge roll their attacks until they do the overhead smash. If you hit R1 when their claws are up, you riposte them.
