It's like 98% water or something like that. There's so much water in it, it's actually negative calories - your body uses more energy consuming it than it gets from breaking it down.
I think it does have some kind of compound that doesn't show up on the food label though... antioxidants or something.
I'll crave celery until I bite a stick and then I remember why I don't eat raw celery. Use it a lot in cooking, though.

Nothing, not even celery has negative calories. For even the most high fiber/water content food (such as celery or cucumbers) you only use about 10 - 13.45% of the ingested calories. For example, a stalk of celery at 10 calories would only have you using one calorie, so its a net gain of 9 calories.
