I went through a phase of wanting tropical fish but quickly found most were boring looking and the exciting exotic ones would require a £500+ tank so quickly lost interest

Plecostomus, basically everyone with a fishtank should have one of these algae eaters. They don't completely negate the need to clean your tank but they do a damn good job of helping you out with it.
Crayfish are also pretty cool to keep as long as it's one or two max. Blue and Red are the ones I had when I was growing up but there's quite a few different colorations.

And Emperor Tetras
Love African cichlids, Oscars, and various rainbow fish as well.
I do like a lot of salt water species and would love a reef tank.

Beta's because even my kids cant kill them. I have scooped a live healthy Beta fish out of my sons tank that you can not see through.
We've just added some Hong Kong pleco(s?) to our tank. Fascinating watching them slide over everything, especially the glass where you can see their underbelly and mouth. They're cute in a way, and currently my favourite (if I could ever have a "favourite" fish)
