I'm assuming you're referring to the pictures of the edge of the visible universe. They're pixelated because that's as far zoomed in as they can get.

I actually give these guys a lot of credit, for not only waiting X number of years for the probe to get to where it's going (sometimes to fail) and then being able to actually make any sense of the crappy pictures, I'd go crazy and wreck the labs.

The color is for presentation only. Black and white is sufficient for most scientific purposes.
