Purchasing a new PC - advice needed

Hi everyone. I'm on the verge of buying a new pc from www.dinopc.com - My Budget is £1000 .

The main games i play are wow, diablo, csgo, with the occasional session on Gta, doom, shadows of mordor, dragons age.

I currently have the following selected (£1150 inc VAT + Free delivery):

    CPU: Intel® Core™ i7 6700K @ 4.5Ghz / 4.6Ghz or i5 6600k ?
CPU Cooler: NEW! Corsair H80i v2 Performance Liquid Cooler
    RAM: 16GB Corsair 3200mhz Vengeance LPX DDR4 (2x8GB) or 4x4GB ?
    Graphics card: NEW! NVIDIA® GeForce® GTX 1060 6GB
Motherboard: Asus Z170 Pro Gaming or choose another? (See below)
Operating System: No Operating System - I will install my own
    Case: Corsair Carbide Spec-Alpha Black
PSU: 650W Corsair RMx Fully Modular or 750W?
    Sound Card: Onboard 7.1 Audio

Would this sort of setup be able to play the games listed above on ultra/max?
is it overkill and can possible downgrade the i7 processor to an i5 6600k ?
    Motherboards of choice are: Gigabyte Z170-Gaming K3 , Gigabyte Z170XP-SLI , Gigabyte Z170N-Wifi , Asus Z170 Pro Gaming , Gigabyte Z170MX-Gaming 5 & finally Gigabyte Z170X-Gaming 5
Which of the 2 RAM channels shall i go with?
shall i get a 750w power supply instead?

(I will be using my current Samsung Evo 850 SSD , 1TB Blue WD Hard drive and CD/DVD drive)

Thanks in advance for any suggestions.

www.dinopc.com is where i am purchasing from. They do have a wide range of components. What i have currently selected is based on opinions of a few friends and a budget constraint of £1000 - £1200. I'm using their custom configuration section. Only downside is that they do no specify or give you an option of which brand of graphics to choose. They use what they currently have in stock.

For gaming the i7 wont be a upgrade the i5 6600K is fine.
    Aircooling over AiO Watercooling.
2x8GB is fine and 3200mhz is wasted 2400-2666mhz are enough
Asus Z170 Pro Gaming is fine.
Dont get a Nvidea GTX 1060 FE get a MSI,Asus or EVGA version.
PSU is fine even 500Watt will be enough.

Extremely limited range of components, decent prices. I wouldnt recommend building there simply because you cant get a build without bad components there. Suggest building yourself.

No decent coolers, no decent videocards (judging by the pictures), no decent memory choice (16GB DDR4-2400), no value motherboard choices, bad PSU choices (all good PSUs are overkill on wattage).

thanks for the advise guys. i have spoken to DinoPC & they have said that if i want a specific brand of graphics card, they could order it in specifically, otherwise its going to be whatever they have in stock. Also, thanks for the heads up on the RAM, guess i can save some money on getting a a lower speed. What sort of air cooler should i be looking to get rather than water cooling? I'm assuming its got to be a high end one as i intend on getting the CPU overclocked. I guess i can try to look around and perhaps check overclockers, although i do hear that they are quite expensive.
