Each profession and its quests take players to multiple zones in on Broken Isle.

They also send you to some fairly odd places,
as an example, later in the skinning chain you get sent off to skin some "old" bosses, such as Netherspite in Karazhan and Garalon in Heart of Fear

Keep in mind there are also shoulder enchants for better gathering as well.

This neat list shows where and what reputation you will need. Extra mats for professions are always welcome in the beginning of an expansion.
