Sim your character.
In general you should always sim your character for stat weights.
For crit build you take the talents (Elaborate Planning + Exsanguinate) this makes your general stat weights (Agi > Crit > Vers > Mastery > Haste). If you have over around 38-40% Crit AND 100-110% mastery you can start going Poison build (Elaborate Planning + Agonizing Poison or Master Poisoner + Agonizing Poison) the stat weights for poison build is (Agi > Mastery > Crit > Vers > Haste). Agonizing poison does not do well on cleave fights or aoe fights and is generally worse in mythic+.
Since gear is very different in legion it is better to get the addon pawn and sim your characters specific stat weights and import them into pawn.
Wait a second here... Xavius the main cleave fight this raid. there is like 1 add up for like 1 min in a 6-7 min fight. Yes AP does great in ST and is prty much equal to exsang on 2 target, but it's far from great on AoE, the mecanic of agonizing poison is just bad in AoE situation where most of the dmg done by assa comes from deadly posion from FoK spam... If you want to do good in M+ playing AP is not the best choice as you have to change to DP for trash and you lose the bonus Nrg form exsang.
Stat weights change depending on your subspec build, poison or bleed.
