Look up Pistol Crabs. They do the same thing.
Depends on how close they shot the gel from. Looks almost like unburnt powder to me.
I suspect you're seeing adiabatic compression of gas in the cavity (notice the ends get sealed off), heating it like in a diesel engine. The flash might be ignition of particles shed from the gel, or simply the gas getting hot enough to emit light on it own.

This. Due to the sudden contraction and resulting compression the temperature is raised suddenly which seems to initate some chemical reaction.
It is apparent from the colour fo the flame, the resulting smoke and the burnt patch in the gel that you can see towards the end of the sequence.
Pistol crabs do the same thing to stun prey.
How can this be useful?
