Why not? I'm really curious to try alligator as well.
There are people who have eaten feces but that doesn't mean humans eat feces. It's not common for pigs do it, in the same way, its not common for people to do it.
Pigs don't even eat and crap in the same places, like many other animals. If given space, a pig will have a clear area for that stuff away from where they sleep and eat.

I'd eat anything, given the chance. I don't have any major ethical qualms, but I'd rather the rarer critters died of natural causes or somesuch before I dig into them.
