what is your favorite spaghetti bolognese recipe? should it be spicy?
Carrots
Onoin
Celery
Garlic
Thyme
Tomatoe Paste
Red Wine
3lb Beef, Pork or Veal (Or a mix of any)
Pasta of Choice
Olive Oil
Kosher Salt
Bay Leaf
Parmesan
1. Food Processor the Vegetables into a paste. Saute with about a tbs of kosher salt and olive oil until it browns.
2. Add beef and another tbs of salt (yes you heard that) until it browns again.
3. Add in tomato paste (about a can) until it browns
4. Add in about a bottle of red wine and bring to boil
5. Bring to a simmer and add in a full bushel of thyme (tied by butchers string) and a few bay leafs.
6. Maintain your sauce with extra water so it doesn't burn or get too thick. Do not add to much water, just enough to keep it moist.
7. Keep simmering for 4 hours or longer in a crock pot.
Pasta
1. Boil pasta in salted water (lots of salt!)
2. Dry and add some olive oil.
3. Add in Parmesan and sauce and cook together.

I put a pinch of crushed red pepper so it's not really spicy and a little cummin on top of the usual spices is nice
Oh the most important thing is a piece of Parmesan rind. Let it simmer in the sauce.
