On a sidenote, why are there so few brothers and sisters in the Warcraft universe? Insane amount of characters without brothers and sisters, and cousins by extention.

Dude Valeera did had affection for Varian. Anduin is basically younger version of his father. She definitely have hots for Anduin.
Also why people ship him with Tess? If he should marry someone from Gilneas it should be Lorna - she much closer to Anduin in terms of age and from nobles.

It would be interesting if he died at the end of BfA and then the world was revamped, with the human areas focusing on a plot to seize power by Stormwind nobles.
The Alliance was at its best when politics were part of their questing experience.
When it comes to politics only two things matter: power and working womb. Jaina, Calia and what not. They are waiting for just the right seed. Fee-fi-fo-fum
Blizzard have always said that the Warchiefs power is absolute. The Alliance is not democracy it is just a military alliance between it's members. Think of NATO and that is pretty much what the Alliance is, with just the 'High King' role as overall commander of the combined military force.
With regards to Varian, that had nothing to do with the Alliance as a whole. That was a conflict between two kingdoms who are part of the Alliance. Varian as Head of State of the Kingdom of Stormwind took the kidnap of Anduin as an act of war. So in a way you could say that Ironforge and Stormwind were unofficially at war at this point. So in response Varian infiltrated Ironforge and freed his son. He was then going to kill Moira as a perfectly natural response to someone who has harmed their child.
If Varian was dictator he could have just assumed full control of Ironforge there and then and installed an overseer to control the Kingdom. He didn't. He suggested the Council of Three Hammers which the people of Ironforge and the leaders themselves agreed too. If they rejected it Varian had no legal right at least to impose anything on them. And based on his character I don't think he would have tried.

you can be friends without having a romantic attraction. Never once has she ever shown to be romantically interested in Varian, or Anduin for that matter at all. And with the Alliance now trying to take Quel'thalas, there is a very slim chance she would stick around Stormwind anyways, she does after all call herself a blood elf and take great pride in her race.
Also that's not how political marriages work. To truly bond the kingdoms you marry royalty to royalty.

She culturally identifies as a blood elf, taking pride in her people's traditions and defending their tribulations and loyalties.[6] However, she herself acts independently of the Thalassian government, and has formally joined neither the Horde nor the Alliance since her introduction but is fiercely loyal to Varian and his son.By this logic Varian should have married Calia. She is also Fiercly loyal to Quel'thalas and the Sin'dorei. She isnt going to stick around after the Alliance is trying to invade her home land.
Uh Calia was already caught up in a different political marriage to a different kingdom. This is seen in "Arthas, rise of the Lich King." Your logic is flawed.
