With "3-spec-teams" I mean Team consisting of one class with every member having one of the three specs.
Personally I'd say either Paladin or Druid.

Druid would win for sure, followed by Shaman or Paladin.
I dare to say there is nothing that a team consisting only out of either Paladins or Druids cannot do.
In Arena, 3x class strenghts, though 3x class weaknesses, add to this 3 roles each member fits and 99% chance they won't be against team of 3x Class Nemesis.
Oh, and 3x fun.

Wouldn't Disc/Holy/Shadow be pretty efficient though?

Aside from Shadow, disc and Holy can also dish out some damage.
1x Silence
3x Arcane Torrent (cause who doesn't roll BE, right?)
3x Mind control
3x Dispel Magic
3x Fear Ward
3x Mass Dispel
Prayer of Mending flying all over the place, PW:Shield etc etc

DR would kill CC dependant classes like druids and priests. Triple paly would probably kill every team except triple shaman. Triple shaman would probably kill every team except triple rogue (assuming equal gear and skill). Druids would get rolled up by a lot of teams because both cat feral and boomkin are super squishy.
protret/ret/holy paladins would pwn, protret has an even bigger burst than retri's, and they complete the retri with another stun and a silence every 30s, they'd beat the druid team with switches, and the shaman team by outlasting bloodlust and then gibb the restoshaman in a stun.
The ret/prot/holy pallies would dominate everything.
If this isn't obvious, try it.
any hybrid class would have the upper hand
i voted for Druids
they have an huge array of abilities
burst, CC, strong heals, survivability
2nd paladins and third i would go for mages
imagine sheep 2 targets at a time, Arcane burst + frost MS/shatter + fire mage's annoying ways to keep you out of the fight.

The Shaman team would have enough totems and versatility to counter every other team, except 3 rogues. I mean with 3 shaman you could spam grounding totems and fear would be worthless. Plus they'd win any mana battles. 3 Magma totems would tick for about 3k every 2 seconds.
Well the Hybrids obviously.
I'd most likely say Druid>Shaman>Paladin.
