noob needs some help for ret pally

I have a poorly geared ret pally putting out like 2.8k dps for 5 mans...I have been curious I havnt been able to find any updated info on what stats I should shoot for with me going after newer content gear.

I always hear people talk about hit caps, crit caps, blah blah blah caps...

I have searched and cant find what exactly they are, like what is the hit stat capped at or crit, or whatever capped at.

Also should I go for straight strength with my gear, or go after other stats also, I just am totally lost and want to better myself but cant seem to be very good sifting through the stuff I get going through the search engine.

8% hit, -6.5%dodge, 100% crit are the caps for raid bosses, but at your level just gear for str.
