Whenever I mouseover another player, their 'nameplate' pops up(not sure if it called this), listing name, guild, level, class, and player or npc.
I'm looking for a way to either move these or disable them altogether.

It's the tooltip, why would you want to remove it?

Addon called Tipsy is what I use. Just type /tipsy show and you can move it where ever you want it.

Tipsy is just for moving it.
TipTac, CowTip and others are replacements which while offering the movement also can provide customisation options regarding the appearance and information displayed.
As to which suits you, that is up to you.
