If you were new to WoW again, which class would you choose and why? I remember my first character was a dwarf priest. It seemed quite interesting, since I'd heard about their ability to heal and I didn't want any "wizard-like class."

More than likely, I'd roll a Druid, just like I did the first time around. I liked the notion of being able to play a caster class that could switch things up and fill a different role at a whim. Oh, the things I did not know . . .

If by "new to WoW again" you mean starting all over but maintaining my current knowledge, I would make a Human warrior or priest. Even though I spent 80% of my time on horde, my heart is with the alliance.
I would probably again start with a warrior.

I would:
Roll and Undead Mage, level it with frost aoe asap to 60, get some pvp and pve gear from MC and such, farm bijous and get rich in ZG. Then i would buy 5 copies of TBC, and a better computer with money from savings, multibox 5 draenei shamans to level 70 and play with Konnichiwa. Get fully pve geared with my 5 shamans asap and get #1 5v5. WotLK was pretty boring but i would stop multiboxing, play my rogue i leveled in the meantime of 3 years. Would join the farm runs of ICC rep once it was available and find a raiding guild. Would probably have a break from 1 march 2010 to 1 july 2010.
I doubt I would do things differently. What I did when I started is that I read everything that was available on the official site before deciding on a hunter. I replaced him as my main with a mage main about a year later.
I might roll a warrior as a first character if starting all over again, but chances are the hunter class would still draw me in as a newcomer to the game.
Kinda hard to judge. Would be hunter, mage or warrior. I love healing with my priest, but don't think that coming into an MMO fresh I would be drawn to a "healing" class.

I'd choose a warlock just like I did when I WAS new to WoW.
I've always liked caster classes and warlocks seemed cooler than mages and priests. Especially priests.
For the race... I'm not sure. At the time I chose human because "I'm a human in real life, it's the most realistic!" I also made it look like me. But now I only play horde, and I think pretty much all horde races are cooler than any alliance race (except dwarves). So.. meh.
EDIT: And after I leveled my warlock for a while, I'll convince myself to try a melee class and fall in love with rogues. A little while later, I'll go back to a caster (but a mage this time) and wonder why I ever wanted to play a melee class.

I'd go Pally, at the start I had a huge debate between Druid (My current main) and Pally, i wanted a hybrid that could tank or dps and heal whilst solo'ing, so I rolled boomkin with offspecs. Looking at it now if I'd have played a Pally i woulda had Shadowmourne by now, my DK alt is still a few quests off
If by new to WoW again, you mean 'with our original knowledge of the game when we first started', the results should reflect the character that everyone originally chose in the first place. As they would be in the same position as what they were, when they originally picked up the game?
Theoretically you should receive the same results if you were to pose the question, 'What was your first WoW character?'. I’m not sure if those were the results you were looking for, or if you just posed the question incorrectly?
In my case, it was a Night Elf hunter. Glad I changed to Undead Mage
Probably a warlock or priest. Maybe a mage though.
It's amazing how different we all are. Druid and paladin happen to be the two classes that I dislike the most. I won't be levelling my 70 paladin or 72 druid past where they are now (and my DK is going to sit at 80 for the same reason). There is just nothing interesting or exciting in playing either of those classes when I get what they can offer from my other toons.
I want to play every armour class (cloth, leather, mail and plate), have the races that I like (human, draenei, night elf and soon, worgen), and play each type of class (melee, tank*, healer, ranged, caster). If you can cover that, you're set.
*I really dislike tanking more than any other role in the game, unfortunately. Doubt I will even step in that direction for Cataclysm. :/

Roll a Priest, get annoyed at how slow it levels. Quit for a few years. Come back make a druid. From there I would slowly realize I enjoy every class except priest.
