KotBS of Warhammer Online, sure twisting isn't the most engaging class mechanic but the armor sets and styles are my favorite of any game.

As someone already mentioned before, a gambler style class from FF. One I'm thinking in particular is Corsair from FFXI. You roll dice (the animation in game has them on cards) and the better you roll the stronger the buff is. Plus abilities like Quick Draw and Random Deal would be sexy as hell in WoW.
Quick Draw: Shoot a bullet charged with the magical energy of an elemental card. Special items required. Using the Elemental Shot corresponding to the element of an enfeebling effect will increase the potency of that enfeebling effect. For example, using Earth Shot after the spell Slow (an Earth-based spell) will enhance the Slow effect past its presumed cap. Quick Draw's augmentation effect occurs even if Quick Draw has been resisted. See below for a list of the effects.

* Light Shot: Dia Defense Down+5%, Damage Over Time increase^
* Dark Shot: Bio Attack Down+5%, Damage Over Time increase; Blind+10%
* Earth Shot: Slow+10%
* Wind Shot: Acid Bolt Defense Down+5%, Gravity+?Verification Needed
* Ice Shot: Paralyze+10%, Bind+?Verification Needed
* Thunder Shot: Stun+?Verification Needed
* Water Shot: Poison Damage Over Time increase
Random Deal: Has the possibility of resetting the reuse time of a job ability for each party member within area of effect.
Plus you're a pirate, and that's just awesome.
