If you can handle default UI: Pick up/copy over your favorite class and take in the wonderful new mechanics and changes. Hop on a flying mount and look at your favorite zones from an entirely new perspective. Do a few starter quests in the new areas and look at the crazy stat scaling.
If you cannot handle default UI: Spend a few hours finding Addons that work in beta, and reconfigure absolutely everything.
EDIT: Don't mind the cranky people. They probably don't have Beta.
Though, in retrospect, I believe there's a sticky for all of the people who got Beta invites. . .

i would do all the new starting areas first so i wouldnt be tempted in when Cata first comes out. Then do the new questing areas so i know what to do on my main when i start questing

send me your up-to-date data folder by mail because I also have the beta, but I can't afford the 12gb of patches (ISP bandwidth limit).
