As long as getting exalted with the factions let you purchase their racial mounts in the same way as the ground mounts I am all for the idea, more mounts the merrier.
Humans, well we already have Gryphons, that would do.
Dwarves would probably be Eagles.
Night Elves? Owls I guess. Big Owls.
Gnomes a plane like those you see at the Ironforge Airport.
Draenei could have mini Exodar like ships ( Shutup, the Naaru can make us some more ;] )
Worgen could have... I have no idea.
Orcs could have... Wind riders, as humans have Gryphons.
Forsaken? Some kind of skeletal construction. Or Gargoyles, as someone else said.
Tauren, big hippogryphs.
Trolls, must be bats.
Blood Elves on Dragonhawks.
Goblin on mini zeppelins.
If people wanted more original ones for Humans or Orcs, they could... maybe... bring in Pegasi... and Chimera for Orcs?
Meh.
More mounts though, definitely!

Dwarves are the ones that trained gryphons for flying, I believe. So that would make a little more sense then humans getting them. An actually mythological Roc (scaled down a lot) would be a good mount I guess for Tauren but the way blizz depicts the Roc in wow theres no way a Tauren would ever fit on it. Lol. Honestly, with all the flying mounts out there I doubt blizz would ever put so much time into creating race specific mounts when everyones just going to use the rare / dungeon mounts anyways.
If I had to chose though it'd be something similar to renegade raven's post.

I've taken the best ideas that I think would work for which race from other peoples ideas, but also added my own.

Tauren could use Chimeras as mounts, they're the biggest bulkiest flying mobs outside of dragons.
