I think it is how much you do for the guild, like if you gain experience for the guild, or benefit towards an achievement. Don't know though.
Edit: Could also just mean how much you play...

maybe just the gold, experience, reputation or achivment you did for your guild?

I don't have cata so I've been doing the Loremaster achievements, when I look at the guild activity I see my guild members who are leveling with over 400.000 activity while I have 10.000, I think it has something to do with you doing stuff your own level

Think its just doing quests. Dungeons seam to give nothing unless it has to be full group of guild members... But doing quests seam to give like a fraction to the guild so like 13k I think is like 3k exp to the guild.
