You didn't state current, so I'm going to go real crazy here.
Baseball : This one is piss easy. George Herman Ruth. The only ever player to both have a 20 win season as a pitcher AND have a season in which he hit 20 or more home runs. In fact, he hit 60 once. Any team with "The Babe" on it will instantly have a higher chance to win a championship.
Basketball : It's so blatantly obvious. Bill Russell. What, you thought I would say MJ? HA! Jordan was nothing compared to Russell. More rings than fingers > 6 NBA titles.
Football : This one is actually tough. The most important position is quarterback. Bradshaw on championships would be a choice most would go with, but he threw close to as many career interceptions as he did touchdowns. I would go with John Elway. Elway went to Super Bowls when pretty much his entire offense was John Elway and some guys who had to catch his throws. No running game, and the recievers weren't exactly Hall of Fame guys like Rice or Swann.
Hockey : Bobby Hull. Come on, the guy played until he was 40! He would be a great centerpiece to have just on longevity.

If I'm starting a team with one player to build around, they have to have 4 qualities. Young, phenomenal, marketable, and an every day player.
NBA - Derrick Rose. A 22 year old MVP who is as humble and grounded of a superstar as you'll ever find. Maybe not as marketable as an LBJ or Dwight Howard, but I'll take it anyways.
MLB - Troy Tulowitzki. He's 26, he's fantastic both offensively and defensively. You always start your team in baseball from the middle up, and he's as good as they come. However if I was starting a team in a heavily latin market, I'd probably take Hanley Ramirez instead for marketing reasons.
NFL - Aaron Rodgers. It pretty much has to start with a QB for an NFL team. The amount of teams who have won a Super Bowl without an elite QB are very slim. Yeah there are a few QB who are right now, better than Rodgers. But he's 27 and has more years of his prime left than any of the other elite QB. Highly marketable personality as well.
NHL - Sidney Crosby. He's young, he's talented, and whether warranted or not he's the face of the NHL. He's proven he can win championships, and from a marketing standpoint there's nobody in the league who is even close to his popularity with the general public.
I know I place alot of emphasis on a players marketability, but in my eyes if you're starting a team you need to get a player who will fill the seats as well as the scorecards. And with all the money they can make you, reinvest it back into the team.
