This is kinda a hard question to answer, since it depends on spec, play style, etc. Pretty much everyone has a lot of key binds, especially the higher up you go in competitive pvp. I thought I would get serious about arena in 4.0.6, then I tried to bind my abilities to be in easy reach, and failed horribly.
First time I ever thought about buying a better gaming mouse. Still might, my friend loves his.

Some of the highest-rated people I've ever had the opportunity to watch play had fairly few keybinds, at least compared to myself (feral engineer solo pvper).
Check Neilyo's recent video or any of the long-term high-rated ferals, like whatsisname and the other guy. Sorry I'm a bit tipsy.

I personnaly thought only the result was important. If you have 60+ keybinds? 20-30 keybinds? 7 maybe? maybe you click? I don't think it really matters at this point if you still win.
To all of you who say that an Arcane mage only have a few keybinds. Bugger off.
Why on earth would an arcane mage only bind his or hers offensive abillities? An arcane mage has no use of CoC, nova, sheep, remove curse, ice block, mana shield or any other defensive abillity. Nono. Arcane mages are like glass canons - yes they nuke the shit out of you, but if you get within 10 yards of them, they die simply by poking them.
Wake up, morons.
And no, I don't pvp as arcane, I pvp as fire.
