So I have a question that I am guessing cannot be answered but I will ask it anyway. In wow when I played the rogue I loved how if you made the slightest mistake it would turn the battle around and made things harder for you. I guess I enjoyed having to know what ability to use in what situation. Does anyone know if there is a profession that has to manage their abilities like this? I am not sure if my question was clear just let me know.

Thief will be exactly what you want.
No CD's on your 5 weapon skills, but instead they cost initiative to use. You have 10 initiative skills ranged in cost, so if you use skills too fast, you could end up in a bad spot, though a good Thief will know when to use which skills, and when to be in close and when not be.
Anet describe the Thief as a profession that jumps in and out combat, dealing alot of damage quickly, but if you stay in combat too long, you're quite squishy.
You have lots of skills which bounce you in and out of combat, aswell as lots of skills to bring emenies to you, or get away.
Here's a good Thief video for you to see some skills in action, although he stays away from typical weapon setups you see on Thief (Dual dagger/pistol).
