Bowser was coolish, with the helicopter suit. But the minibosses were all the same.
Anyway, I'd also have to say that Diablo and Azmodan from D3 were fairly disappointing fights. Belial was a pretty cool fight. He slams down in the final phase and you're like "aw dang this aint' gonna be good." Diablo and Azmodan were just kinda... running around attacking you. Fairly underwhelming.

Im going to say the most disappointing boss I have ever encountered is the boss I am currently working for. The main strat for my current boss is to just los him and look at facebook all day. If he comes over to me than I just use distracting shot. After him I would say Bowser from Super Mario (all you do is run under the guy)
Uh, the Al Mualim boss fight can't be won with a single grab/assassinate combo. It's a multi-phase fight and at best you can get through one phase each time you do that. First phase is you fight all 9 targets, (they have guard level HP but Templar level damage) next phase is you fight Al Mualim and a bunch of his clones. When you "kill" the real one phase 3 starts where he drops you to 1 HP and runs away. When you catch him, he retreats after you deal a certain amount of damage to him. This repeats a few times until you kill him. The grab/assassinate combo is an instant kill against any one enemy, but it doesn't actually kill him until you go through all the phases. Also he has like a 70% counter grab rate.
I mean, he's not the best boss ever, but it's not like you can just one shot him and be done with it. And on that note, I vote Lucien from Fable 2 as most disappointing "boss" ever for exactly that reason.
