Chess Event
Anything in the first 4 wings of the awful naxxramas re-release
Morchok
Guardian Kittens
Too bad you won't play Mists of Pandaria, its the best expansion since The Burning Crusade.

TBC: Retired at the current time so can't say

Cata: Yep Halfus
Panda: Didn't raid this expansion / only done LFR
Didn't raid in Vanilla or TBC
Wrath: Hmm, I'd have to say Twin Valks was SUPER easy once you had a modicum of gear.
Cata: Omnitron was easy.

W: Gunship
C: Fandral
M: Mogu Twins
Vanilla: Wasn't around
BC: Chess, managed to solo it a few times before nerfs, can be made harder with a bad group though, which in that case Attumen
WotLK: Noth the Plaguebringer
Cata: Morchok early on, Ultraxian if gear wasn't an issue
MoP: Spirit Kings normal or Jin'rokh... hmmm... hard to pick

Special Edition: Easiest heroic/hardmode bosses for each expansion since implemented:

Cata: Tie between Shannox and Morchok

Uh, vanilla easiest boss by far was pre-buff Shazzrah. By the time the expansion was done.... hm, Golemag probably the easiest of the 40-mans.
