No, there's not.
There's not a whole lot of lore behind mounts in general though. Frost Wyrms, Mimiron's Heads, Invincibles and Kor'Kron Juggernauts are all probably non-canon.

There is, however, a book-length thread over in the Warlords of Dreanor forum which discusses practically everything anyone would want to know (and quite a bit that no would want to know) about flying in Dreanor.
