We've had a few of these. Most bosses we just refer to via abbreviations of their name, but some have their own little nicknames.

Magmaw = MagMARGH! .. named for his habit of one-shotting our poor elemental shaman after every riding phase.
Omintron Defense = Omnomnom .. variations of this one are pretty common.
Maloriak = Mac .. named for his creepy flasher-mac voice.
Atramedes = The Druid Whisperer .. was renamed a few weeks back when we had a bug that had every beam home in on our Resto druid.
Chimaeron = Chim-Chim-Cheroo .. which I think came from Mary Poppins originally.
Onyxia = Knickers .. she's a girl dwagon!
Nefarian = Snuffles .. I don't even know why, he just is.

Halfus = Half Arse .. first boss we downed and usually where we start our raid nights and aren't at the top of our game.
Valiona & Theralion = Double Dwagons .. named for an old beat-em-up Sega game and, of course, they're dragons and there's two of them.
Ascendant Council = The Rerollers .. it was this boss encounter that had half of our melee DPS finally throw in the towel and reroll ranged DPS.
Cho'gal = Chuckles .. again, I don't really know why.

Oh, the Throne of the Four Winds guys are Big Al and the Fartpack.
