The point of the matter is this:

Horde needed another Paladin race. Tauren are the ONLY race on the Horde that are even close to being Paladin compatible. Using the sun as their source of "the light" and tweaking it to a nature-themed version of the class makes more sense than anything else Blizzard could have done.
