In my head canon, what sustains an alicorn's life is the magic inside them. They have a different magical pattern inside them that is what allows them to live a long long life, and thus also cannot be killed by any normal means.
Ofcourse... I myself developed that for my own fic purpose.

For me, the magic talk was making me think of Avatar. Aang got his tattoos when he discovered a new technique (air scooter). Trope? Coincidence? Twilight is actually the avatar? I guess I won't know till season 4.

My theory comes a bit from the game Infinity Blade.
In that game, you face others who are known as Deathless. You can kill them, but they actually don't die (same as your character, he is a Deathless to). They are reborn.
However, this resurrection process can be canceled by another Deathless known as The Worker of Secrets. He sais that he knows how to distabilize their "Quantum Identity Pattern" granting them a true death.
My OC's powers, and thus, also of those who surrounded him at the start, were ment to cancel the immortal life of Celestia and Luna.
