Possible continuity issue.
In Suited for Success, Rarity is wallowing because she was embarrassed by having to show her terrible designs. She says in her wallowing "I used to be respected".
Fast forward to Green Isn't Your Color. Random Ponyvillians enter into her shop, looking for Fluttershy. When Rarity tells them who she is (because they asked), they say something like "never heard of you".
For one, Rarity ought to be well-known among all the residents of Ponyville. And two, if she was "respected" before a famous fashion designer saw her and promoted her product, then she ought to be even more so now, not less.

Heh, I know that feeling. Not much you can do but get past it, sadly.
Creating a solid, believable, coherent universe from scratch is a LOT of work, and I mean a LOT. Really the central theme could be adapted to any existing universe and it benefits greatly from doing so, rather than being placed in a completely original universe. The actual mechanics of Equestria aren't that well-fleshed out in the show--we know there's guards and two princesses that cycle day and night, but really we don't know much beyond that, particularly what goes on outside of Equestria and how all of that works. We know that magic takes energy and that only unicorns can use it, but we really don't know much past that (what are its limits, etc.) because the showwriters keep using it as plot spackle. That's not so much a restriction as it is an empty canvas--I can make up almost any rules I want about magic and it won't break canon.
I don't really see any of it as restrictions, I guess. Also, mildly major thematic spoilers because relevant: The central theme, to be concise, is "What happens after the end?", the end meaning the end of any story in any medium ever. I don't mean what happens in-universe after the story ends, I mean what happens [I]to the story[/I]. Therefore my story benefits a lot by being loosely based on a story that already exists and is fairly well-known, because 'the end' has already happened, so to speak, and I'm exploring what happens to the story after that. Putting it in an original universe would negate a lot of that.
I'm not really super-hardcore adhering to how most think of Equestria, either, if that helps. I'm bending a lot of canon and being pretty liberal with interpretation, and there's a lot in there that is mostly original and has basically no basis in canon. (To name a few: Elemental dragons (i.e. a dragon breathing lightning/water), single-form animal shapeshifters, magic drawn from the void of space, ancient artifacts that enable Earth ponies to create solid constructs.) The story itself doesn't take place in Equestria either, so I throw a lot of those rules out the window, too.
I'm not offended, I totally get where you're coming from. I just don't necessarily agree; there's a lot of reasons I'm still using ponies and it's not because it's a free popularity boost (although admittedly I would probably get a readerbase the size of a dime if I didn't make it related to ponies.)
Not...really. I mean I love ponies, and I love my story, but my story isn't exclusive to ponies, it could fairly easily be made to be about humans or talking animals or some shit. But again, purely from a thematic standpoint, it benefits a lot by being based on an already-established story, and the theme is of particular relevance to the fandom.
