1. Golden Sun I & II (The first and last game that ever made me actually care to read all lore text going on)

2. Metroid Prime Series (minus Other M, but even this game wasn't bad)
There is yet to come any game that can deliver something even close as the gameplay the Prime series brought.

3. Mass Effect 2 (Insanity + Vanguard = hardest game I ever played...and real difficulty, not artificial difficulty)

4. Fable I (as poster below me pointed out, very immersive game with shittons of character development + freedom to play how you want)

Fable 1 for me by far, most immersive game I have ever played with perfect atmosphere.
Mass effect 1/2/3 comes 2nd, great story and I'm a sucker for sci-fi.

This is tough. There's no real true answer so I'll go with my favorite.

Final Fantasy 7. Like most final fantasies, the best FF is the one you grew up with. Plus FF 7 taught more me more English than school at the time. lol

Other good ones for me are: Neverwinter 1 (mods specifically), Neverwinter 2, Civilization 3, Warcraft.
