I am curious why so many top end players are using gladius as their only addon. If you can use gladius, then why can you not use other helpful addons? Do people think they are hardcore if they use less addons?

It's because the most important thing in pvp is reacting appropriately to what the other team is doing ( gladius helps the most with this aspect ). It's not that other addons are looked down upon. But in pvp less is more ( ie screen clutter and what not stopping you from seeing important things going on ) if you can't see it, you can't react to it.
I am always seeing top end PvP players using the default UI which in my opinion is shit because you can't see the enemy's HP in both percentage and numeric form because it will clog up the health bar so much that you can't see the health bar itself. The default UI is also very retarded because your target's target frame will cover a buff from your target.
It ignores such insignificant forces as time, entropy, and death
Pvp requires less information that raiding. The information you need in pvp is really important and gladuis does it rather well, not needing other addons. Unlike raiders(like me) that have 27 different addons to track CDs,boss mechanics, dps, hps, standing in bad shit(I have made problem raiders get GTFO). Using other addons is pvp is not bad, it is just not really necessary...unless you really hate the blizzard UI(like me).
The default UI has many shortcomings, hence why such addons are popular.
Blizzard make some progress, but are slow to do so.
Warlords is adding numeric cooldowns on buttons, something OmniCC has done for years.
I would not say they need less, more in many cases such as needing to react to a much wider variety of abilities than any single boss can throw at them.
In PvE you will need to be aware for any single fight a fraction of the number of abilities or debuffs than you do in PvP.
Arena just has less players you need to be aware of so it looks less.
Gladius has just combined what many users think they need.
Is the same reason why for castbars Quartz is a kneejerk suggestion, and ElvUI for a new UI in general.
They are great if your needs are met by those.
You don't seem to see the big picture. If we had to track EVERYTHING ourselves, it would be too much for most. Gladius is a quality of life addon if anything.
Trust me when I say not all of us need a huge interupt bar in our faces to know that the lock over by los is going to try and throw out some chaos bolts
I'm not sure how you made that inference, but no addons have ever been allowed. This only applies for lan events and has nothing to do with skill; it's that they don't want you downloading things on their machines or taking all day to configure your ui. And even there I believe players have dodged the rules by running lightweight addons as macro-based scripts.
And to answer your original question, players use gladius and interruptbar because the information they track is of top importance and not already provided by default. I don't know what addons you think people should be running, but once you add in timers for dr, interrupts, and trinkets you have enough information to play this game competently with the default ui. Anything else is unnecessary/preference, so of course it'll be less common than the staples.
It's worth mentioning that many of the best would like to use better designed UI's that provide more information with less clutter - but that as mentioned it cripples them in tournaments. It's not however, as is sometimes misunderstood - some elitist desire to make the game as hard as possible by using the ugliest and least effective UI ever invented (the default Blizzard UI).
Wolfenstein was the first 3D game ever invented, and it had a better UI than WoW's default - and everybody knows it. Playing with the default UI will not turn you into a gladiator - if anything it will have the opposite effect. So unless you are already invited to the next big tournament, you are probably safe to play with centralized unit frames, and none of the silly clutter and dragon graphics strapped to all the boxes.
The top top players use scripts and macros for UI instead of addons
They think it affects performance and that they are all gonna go win big tourneys where they don't allow addons.
I personally see insane potential for Weakauras in arena. You can use it to track so much stuff without even cluttering the screen.
Addons not allowed in tournaments, so top end PvPers has to practise with default UI.

In case anyone is wondering what scripts
I used to use addons but after realizing you can't do this in the blizzard tournaments, I've been playing with the default since. Kind of sucks after using Gladius for so long ;/
I find gladius to be unacceptable. I must be in the minority.
