Unlikely. The pet journal has the same kind of descriptions for all pets, including unobtainable ones.

Speaking of mounts: if you aren't aware of it, the stable lets you capture animals and train them to be your mounts. That's where the different colored Elekks and others come from.

Cause some people have them? I have the Swift Zhevra, Amani War Bear, and the Swift Horde Wolf, for example

I think they mean mounts that literally have no known way of obtaining them, like the Black Dragonhawk or the Heavenly Jade Cloud Serpent, and just simply rendered unobtainable, like the Horde Wolf.
