1) Drop the SSD to the MX100 256GB;
2) Don't go for the WD Black unless you want the extended warranty - the 2TB Barracuda from Seagate and the WD AV-GP revision should be more than adequate.

Doesn't matter which monitor it is, it's NVidia's issue there when connecting through an HDMI and sometimes DP.
The 780 has a DisplayPort and an HDMI port. Just plug one monitor with a DP and the other with HDMI and you'd be good to go. U2414H comes with a DisplayPort cable.
Can confirm the color issues on current gen Nvidia cards over HDMI. Took me a solid 2 days of head scratching before I gave up and swapped to a DVI cable. The problem was much more noticeable on my IPS panel (HP 23xi, if that matters) than on my LED display.
